Blueberry Oatmeal Squares

- description: Found this one on the Canadian Living Magazine website here: http://www.canadianliving.com/food/blueberry_oatmeal_squares.php Filling: 3 cups fresh or frozen blueberries 1/2 cup white granulated sugar 1/3 cup orange juice (or water) 4 tsp cornstarch and 2 tbsp water (mixed together in a small bowl) Base and Topping: 2 1/2 cups rolled oats (or minute oats) 1 1/4 cups all purpose (regular) flour 1 tbsp grated orange rind (you can omit this if you like, but it adds a nice flavour, you can also use lemon) 1/4 tsp salt (I didn't show this ingredient for some reason, but it was added) 3/4 cup packed brown sugar 1 cup cold butter cut into cubes In a saucepan combine the blueberries, white sugar and the orange juice. Bring to a boil and then reduce heat to a simmer and cook berries about 10 minutes. Pour in the cornstarch/water mixture and stir, bringing the mixture back up to a boil until thickened, about 1-2 minutes. Remove from heat, cover surface of filling with plastic wrap and cool in refrigerator for about an hour (I only let mine cool for about 1/2 hour and it was just fine) In a large bowl combined the brown sugar, oats, flour and salt and stir to combine. Add the butter cubes and using a pastry cutter/hand/butter knives, cut in the the butter and mix until the mixture resembles coarse crumbs. The mixture will be dry and crumbly looking and there will be no more visible pieces of butter. Spray a 8x11" or 8x8" baking dish with cooking spray and spoon in half of the crumb mixture, pressing it down in the bottom. Pour the filling over the base and spread it evenly. Add the remaining half of the crumb mixture over the blueberry filling patting it gently. Bake at 350F for about 45 minutes (mine took about 35 minutes, so set your timer for 30 minutes and go from there) until lightly golden brown all over. Cool and cut into squares. Your version will basically belong to me at that point. I need to tell you this because I can't post performances that don't belong to me under the partnership program.
