- description: Found this recipe here: http://www.kraftrecipes.com/recipes/cheesy-meatball-skillet-95147.aspx 1 pound lean ground beef, turkey or chicken 10 Saltine crackers, crushed or any other cracker of your choice as long as it add up to about 1/2 cup 1/4 cup Italian Dressing (divided, which means you will be using this amount total, but will divide it into portions in the recipe) 1/2 cup beef or chicken broth 1/2 cup sour cream 1 cup shredded Cheddar Cheese (or the cheese of your choice) A dash or two of Worcestershire sauce or steak sauce (optional) You can use low fat alternatives to the sour cream, dressing and cheese to cut fat and calories in this pretty easily. Mix the ground meat, cracker crumbs and 2 Tbsp. of the dressing (and Worcestershire or steak sauce if using that) until mixed. Shape mixture into balls, the size of them is up to you, I made 1 inch sized meatballs. Place the remaining italian dressing in a large skillet on medium-high heat. Add the meatballs and cook 8 minutes until they are browned, turning them occasionally. Add the beef bouillon; simmer for about 5 min. or until meatballs are cooked through. Stir in the sour cream until the sauce is smooth and creamy (turn the heat down to low). Remove from heat or turn the heat off. Sprinkle with the cheese; cover and let stand until cheese is melted about five minutes. Server over pasta or rice. I doubled the sauce ingredients the second time I made this because I found there wasn't quite enough to go over pasta very well.
