Line a baking sheet with wax paper and grease with cooking spray. 2. In a pot over low heat, melt butter. 3. Add marshmallows and stir until melty. 4. Turn off heat and immediately stir in cereal. Stir until completely coated. 5. Press mixture onto prepared pan and pat into a thin even rectangle. 6. Spread Marshmallow Fluff in a single layer. 7. Sprinkle with graham crackers, pressing in to make sure they stick. 8. Use a spatula to smooth into an even layer. 9. Slice sushi in half lengthwise, then roll up halves, starting from the long side. 10. Refrigerate until firm for 1 hour. 11. Slice into sushi rolls and serve with melted chocolate.
