They have encouraged me over the years to share our healthy, natural recipes with others and we decided this would probably be the best way to do this. These recipes don't take much time. They're really, uh, short and easy and the best part about it, is that they're all natural. There are no chemicals. artificial flavors, preservatives or additives of any kind used in the recipes. Uh, a friend of mine once told me that a well-used cookbook is going to look a little bit rough. I think our cookbook here qualifies for that, wouldn't ya say? 01:05 Well, the recipe for the sweet potato pie recipe that we selected is coming to you from the Naturally Great Foods cookbook copyright 1977, although the recipe for the pie crust is coming to your from the Settlement Cookbook now this cookbook has had probably about thirty different printings since uh 1900 uh... this one is probably about 1986. let's not take any more time and get started with making our pie crust. 01:44 To this bowl, we've already added, one cup of olive oil and one quarter cup of water. Now, we're going to add 3 cups of flour. So, of course, we want to make sure that we level off the top . I only have a 1/2 cup here, but sometimes we just need to improvise. I'm sure you've run into that situation yourself. The interesting thing about this pie crust is that it doesn't have to be rolled out. What I like to do and my kids, as they were growing up, enjoyed it immensely, is make almost like a sculpture in the pie plate, using the dough. I'll show you in a minute how that works. It's really kind of neat because you're actually pressing the dough into the pie plate. It's take a whole lot less time than rolling it out. Make sure you get all the dough off the sides. As its mixing it will turn into little clumps. That is the it should be. 03:19 You don't want it to be too wet, obviously, or you will have some problems. Now, I do have a batter utensil but this seems to work just a little bit better for what we're doing here *Get a little closer here to show them what it looks like when it first comes out* we just want to get the, uh, the pieces across the sides here, almost like kneading bread, if you've ever kneaded bread before, you kinda come up with dough that looks like this. Then, we want to take and just press press it into the pie pan to make this really, really tasty crust and it's it's really fun when you're doing this together. Jenny: Well, every morning on Black Friday, we'd have this pie for breakfast from leftover from Thanksgiving dinner. and you'd sweet potato pie on Christmas. Andrea: It was easy to quickly get that piece of pie before running out the door at 4:30 in the morning. Giving you the energy they need. Jenny: mm-hm. Andrea: Definitely 05:24 You want to make sure that, in the corners, you push in or else, you get a crust that is too thick. Push in those corners. Well, this is our finished pie crust. I remember when I was little my mom used to take a fork and and put little etchings all across You can do that if you like but many of you have shared with me you'd like to cook, naturally from scratch but you don't have the time and we're trying to make these recipes as quick and easy as possible.
