- description: Recipes will be on cookingwithremi soon, until then, see below!! -- MARIE SUPREME NACHOS Serves: 10-12 | TOTAL TIME: 30 minutes | daisy rating: 2 (NOVICE) ingredients for the base 1 (20 oz.) bag tortilla chips for the cheese sauce 2 tbsp. butter 2 tbsp. flour 1 ¼ cup whole milk 1 (8 oz.) block medium cheddar cheese 2-3 tbsp. jarred jalapeno juice seasonings, to taste: salt pepper garlic powder onion powder for the guac 1 roma tomato 1 medium red onion 3 avocados ½ lime 1 small bunch cilantro, finely chopped (optional) seasonings, to taste: salt pepper garlic powder onion powder suggested toppings ½ lb. cooked steak, cut into bite-sized pieces 1 (15 oz.) can black beans, rinsed and drained 1 (15 oz.) can sweet corn, drained 2-3 tbsp. pickled jalapenos 2-3 tbsp. Trader Joe’s Hot & Sweet Jalapenos 1 fresh jalapeno, chopped with seeds removed ½ cup pico de Gallo ½ cup cilantro, chopped 3-4 tbsp. sour cream directions begin preparing the cheese sauce by adding butter to a skillet over medium heat. once butter has melted, whisk in flour to make a roux. once the mixture has thickened, slowly pour in the milk, whisking continuously to incorporate. reduce heat to low. roughly chop cheddar cheese into smaller cubes. add cheese to the skillet and let melt briefly, then mix in the seasoning and a splash of jalapeno juice, adjusting to your desired spice level. stir sauce frequently until melted and smooth (if needed, stir in another splash of milk for a thinner consistency). while the cheese sauce is melting, dice the tomato, avocado, and about ⅓ of the onion, then mix together in a medium bowl. season to taste with salt, pepper, garlic powder, and onion powder, then stir in the cilantro and the juice of half of a lime. use a fork to stir and mash the avocado until the mixture reaches your desired consistency (this yields a nice and chunky guac- for a smoother texture, mash avocado separately before incorporating tomato and onion.) cover and set aside until ready to serve. pour around half of the bag of chips into the center of a large bowl, then add a generous layer of cheese sauce. pour in another layer of chips, followed by more cheese sauce. begin layering in the toppings, loading up the nachos with black beans, corn, and jalapenos. add a final layer of chips and cheese sauce, then top with steak bites, pico de gallo, and cilantro, along with any remaining corn and beans. add a dollop of sour cream, followed by a heaping spoonful of the homemade guacamole. top it all off with a squeeze of fresh lime juice and some more cilantro to garnish. --- ANGEL HAIR alla VODKA Serves: 3-4 | TOTAL TIME: 35 minutes | daisy rating: 2 (NOVICE) ingredients 1 (16 oz.) box angel hair pasta 3 tbsp. salted butter 2 shallots, finely chopped 3 cloves garlic, finely chopped 1 (6 oz.) can tomato paste ¼ cup Tito’s vodka ½ cup heavy whipping cream 6-8 oz. grated parmesan cheese seasonings to taste: black pepper salt garlic powder onion powder crushed red pepper flakes (optional) fresh herbs: parsley basil oregano rosemary directions begin by bringing a large pot of heavily salted water to a boil over high heat. add the pasta and cook until al dente, about 4-5 minutes. when pasta is near tender, reserve about a cup of the pasta water and set aside before draining the pasta. in a large skillet over medium-high heat, add butter and stir intermittently until melted. add the garlic and shallots and cook until fragrant, around 6 minutes, then stir in the tomato paste and heat for an additional 3-5 minutes. add vodka to the skillet, stirring until well incorporated, then gradually add the cream while mixing continuously. stir in seasonings and parmesan cheese. add a splash of the reserved pasta water, gradually stirring in more liquid until the sauce reaches your desired consistency. simmer for 5-10 minutes. stir angel hair into the sauce and toss to coat. serve with a sprinkle of parmesan and garnish with fresh herbs.
