But even if some of the things that have been said about the lemon don't end up being as believable as "An apple a day keeps the doctor away," grating a frozen lemon is still worth looking into just because it is so much more powerful and explosive with lemony flavor than the old squeeze of a lemon could ever be. Think about it. If you take a lemon and squeeze it, you get the juice, some pulp, and some flavoring, for sure. But what happens when you freeze that lemon and grate it into fine little crystals? You get an explosion of lemon flavor! The thing is, that explosion of flavor does not dominate any food on the plate. In other words, when I sprinkle these shredded little pieces of lemony goodness onto potatoes and corn or beans, for instance, it doesn't take anything away from the butter or salt and pepper flavoring, it just adds a little explosion of that wonderful lemon bit. You can store the grated frozen lemon in the freezer for a few days up to a few weeks, no problem, just like any other frozen fruit or veggie, and just break it up with a fork so that it can be sprinkled lightly over almost any food: from salads, soup, noodles, and potatoes; to fish and rice dishes; even for desserts such as ice cream and cakes. ------- Now on we go to the HEALTH BENEFITS. These might not all be facts, and some are probably just "Old Wives Tales," but when you are talking about health, and it is a fruit or vegetable, it should be safe to say that there has to be something healthy about it. First, the easy to believe factors. The lemon is a healthy fruit, and as most fruits, you can get vitamin C and good flavor just from its juice and pulp. But like most fruits and vegetables, most of the vitamins are in the skin or peel. So, surely we can see the benefits of freezing the lemon, and using the whole thing, especially in order to get the 5 to 10 times more power concerning the vitamins. And like a lot of other fruits and vegetables might claim, it has been said that lemons rejuvenate health in eradicating toxic elements in the body. But that is not where it ends with the lemon's ability to be a benefit to our health, although non of these things have been proven scientifically to be facts. It still gives hope and something to be tried for people who might be suffering from these conditions. The lemon has been said to fight against cancer cells, as if it were nature's chemotherapy. It could also be beneficial in preventing cancer, and even be used in the fight against tumors and cysts. Too hard to believe? Well that's not all that has been said or thought about the lemon over the years. The lemon has been mentioned to have health benefits against bacterial infections; against internal parasites and worms; helps to regulate high blood pressure; helps to combat against stress and nervous disorders; and can be used as an antidepressant. "Old Wives Tales?" Maybe, who knows. I can only say that if I had any of these ailments, I wouldn't have a problem and would be glad to have another option to try to fight against any of those things. You see, no one is saying here that the lemon is a cure-all to anything. And even if the only thing you get from the lemon is a little squirt of flavor and vitamin C, so be it. It can't hurt to freeze it and experience the lemon in a, let's just say, more explosive burst of flavor. And if it helps us out in any other way, that would be awesome.
